Description

This vibrant blood orange salad  with poppyseed dressing is the healthy, feel-good solution to all your grey skies and Wintertime blues.


Ingredients

Creamy Poppyseed Dressing

  • 30 milliliters (2 tablespoons) plain yogurt, unsweetened
  • 15 milliliters (1 tablespoon) neutral oil (See Note: a.)
  • 15 milliliters (1 tablespoon) white wine vinegar
  • 5 milliliters (1 teaspoon) honey
  • 5 milliliters (1 teaspoon) dijon mustard, preferably coarse-ground
  • 1 teaspoon poppyseeds 
  • Fine, sea or kosher salt, to taste

 

Blood Orange Salad

  • 45 grams (1 ½ cups) baby spinach, washed and dried
  • 30 grams (1 ½ cups) arugula, washed and dried
  • ½ small bulb of fennel, thinly shaved
  • ½ small bulb of fennel fronds, trimmed, divided
  • 1 navel orange, peeled and sliced in rounds 6 millimeters (¼ inch) thick, divided
  • 1 blood orange, peeled and sliced in rounds 6 millimeters (¼ inch) thick, divided
  • Red onion, thinly shaved, as desired
  • 4 grams (1 ½ tablespoons) roasted, salted pistachios, hulled and crushed

Instructions

For the Creamy Poppyseed Dressing

  1. Gather, measure and prepare the recipe ingredients as listed. 
  2. Combine all dressing ingredients, sans salt, in a small jar and tightly secure the lid. Shake the jar vigorously for 30 to 60 seconds until dressing is thick and emulsified. (See Note: b.) Season with salt to taste.

Blood Orange Salad

  1. Gather, measure and prepare the recipe ingredients as listed. 
  2. Combine spinach, arugula, fennel, half of the fennel fronds, half of the orange slices, half of the blood orange slices and red onion in a large mixing bowl. Add half of the dressing to the bowl and toss to combine. Garnish the salad with the remaining oranges, blood oranges, fennel fronds and pistachio. 
  3. Drizzle with remaining dressing, as desired. Serve immediately and enjoy!

Notes

a. We recommend using grapeseed oil for this dressing but other neutral oils such as vegetable, or avocado oil would also work nicely. Olive oil will also work, albeit imparting a slightly different flavor. 

b. Alternatively, you can place all dressing ingredients in a small bowl and whisk vigorously until thick and emulsified.
