There is no better way to enjoy the end of Summer sunshine than with a refreshing Peach Daiquiri cocktail!

A pink peach daiquiri in a fluted coupe glass with a lime wedge garnish surrounded by slices of peaches, limes and a bottle of peach syrup

This easy-to-make daiquiri uses white rum, fresh lime juice and a Homemade Peach Simple Syrup made from fresh peaches. It's a great way to 'Cheers!' to peach season and enjoy the perfect balance of sweet, tart, and delicious!

    The Components:

Fresh Peach Daiquiris are easy to make and only require a handful of fresh ingredients!

    • Rum - We like to use a good-quality white rum for this recipe. White rum (AKA silver or light rum) has a mild, subtly sweet and grassy flavor. If you'd like, you can substitute rhum agricole for a more herbaceous and vegetal flavor. Dark rum can be used, as well. However, dark rum will yield vastly different results. Dark rums are barrel-aged and will have a darker color and a richer molasses flavor with subtle notes of baking spice and vanilla. We do not recommend using spiced rum for this cocktail.
    • Lime Juice - Freshly squeezed lime juice is paramount in a classic daiquiri preparation. While less traditional, lemon juice can also be used.
    • Peach Syrup - At the end of each Summer, we love to transform our delicious, ripe peaches into a simple syrup. See the full peach syrup recipe post for more serving ideas!

    Garnish

For a pretty-in-peach finishing touch, we recommend adding a little garnish to this cocktail. We chose to garnish our Peach Daiquiri with a simple lime wheel. However, a fresh peach slice on the rim of the glass or a sprig of mint would also look lovely!

    Up or On the Rocks?

Classically, daiquiris are served in coupe or Nick and Nora type glass. We like to enjoy our Peach Daiquiris this way, as photographed. If you prefer, feel free to strain your daiquiris over a glass filled with fresh ice.

    Instructions

Peach Syrup (Enough for About 12 Cocktails)

    • Gather, measure and prepare the Peach Syrup ingredients as listed. To view metric measurements, toggle the US Customary/Metric switch at the top of this recipe card.
    • Combine the quartered peaches, sugar and water in a medium sauce pot. Set the mixture over medium-high heat, stirring occasionally. Bring mixture to boil and reduce heat to simmer for 3 minutes. Remove from heat and set aside to cool.
    • Once syrup has cooled enough to be handled, strain the syrup through a fine mesh strainer lined with cheesecloth. Squeeze the peaches through the cheesecloth to extract as much juice as possible. Peach Syrup can be used immediately or stored in an airtight contianer in the fridge or freezer.

    Peach Daiquiri

    • Gather, measure and prepare the Peach Daiquiri ingredients as listed.
    • Combine rum, peach syrup, lime juice and ice in a cocktail shaker. Shake vigorously for thirty seconds.
    • Double strain the Peach Daiquiri through a Hawthorne and fine-mesh tea strainer into a cocktail glass.
    • Garnish with a lime wheel, peach slice or sprig of mint, as desired. Cheers!
